Mac 'n Cheese with Pork Floss

Creative Hump focuses on food this Month

As an Asian American, I love Pork Floss- DUH

Honestly, I don’t know what Pork floss is, just like I don’t know how the sausage gets made. I just know it was a staple in my parent’s home, and I’ve since kept in in my kitchen, like black garlic and the occasional can of spam in case of rainbow rice fantasies.

Can you tell I’m a foodie? I try not to discriminate when it comes to food, and I tend to like almost everything I eat until you tell me how it was made. Still, if it’s part of my parent’s traditions, why not stick with it? How bad could it be?

I’m focused these days on health as well. I’ve been exercising more, doing it 3x a week for some regular rest days. I’m trying not to be focused as much on the weight loss factor as I am on pain management. I think we all deal with pain, but it comes in so many forms.

The picture above is from a new recipe I’ve been working on developed from a no boil mac and cheese. Beware that I’m still tweaking it, so it might not be a perfect recipe yet.

Stretching the mind

Lately I’ve been doing more writing for myself in the mornings. It’s a good daily practice to just let yourself have some creative flow. I am learning what I need by doing this, and focusing on positive things as well as things I want to dig deep inside of to understand the whys and how to do more for myself without tiring myself out. Sometimes just watching myself and analyzing what I’ve been doing can be helpful, too. I can have a very critical eye, and it helps me to aim that inward instead of just outward.

Open your inner eyes

  1. Instead of losing weight- Gain inner strength and pain-free movement.

  2. If my lips are dry: Why not consider brushing my teeth and massaging my face with some coconut oil? Sometimes water is not the only answer.

  3. Sleep can do wonders: But waking up with less pain is important to note! I know that my shoulders may still hurt but my thumbs and wrist will not be as painful as the night before. In addition to massage, I use pillows to support myself.

Why do I love corn?

Both Corn and MSG have had a bad rap in the “health” department. What with GMOs and anti-Asian or anti-processed foods, both of these things seem like they probably should not be edible. Yet I have always loved it. Let’s analyze a few details about this.

Corn is a whole grain

Is corn actually a fruit? Yes, and possibly it’s not actually a vegetable. Feel free to read more about it below.

Uncle Roger?

Embrace the Rainbow Rice

Have you heard the comedy stylings of “Uncle Roger” on Youtube? Unlike me, he is not afraid of making fun of his parents’ accents. Thank G-d.

What food is your favorite and what does that say about you?

If you love something, does it change you?

Is there a fine line between a healthy love of something and an “addiction” or is it obvious and natural? How do we recognize our true feelings about something? Does its absence show you your real feelings?

Is it wrong to love food because it’s sweet, spicy, salty, sour, bitter, or umami? What is it about this sense that is so intrinsically connected with memory? Which memories of ours are actually fundamental to who we are, and do these formative memories cause specific kinds of food to become a basic need?

Do I love corn because it’s one of the only foods that blur the boundaries of the five food groups? What does it tell us about ourselves to enjoy things that don’t fit perfectly in people’s theoretical labels for healthy foods?

Corn is REAL!

The Corn Kid (It has the juice- Meme)

I love that there was a child that found as much joy in corn on the cob as I do. This darling knows where it’s at.
